Chili-Soup-Stew Recipe Swap

Hey, guys! Thank you for stopping by today! If you’re hopping over from Dani at Family.Love.Inspiration, welcome! I’m going to keep my post sweet (well, savory) and simple so you can keep moving and see MORE recipes!

I wanted to use this recipe swap as a good excuse to try something new, so I chose Brie & Cheddar, Apple, Beer Soup with Cinnamon Pecan Oat Crumble. (Whew! That’s a mouthful!) Half Baked Harvest (Tieghan Gerard), has a BEAUTIFUL website with tons of recipes, and that’s where I discovered this one. She recently posted an updated version of it here. AND there’s another spin on it in her cookbook, Half Baked Harvest Cookbook: Recipes from My Barn in the Mountains.

I stayed pretty true to the first recipe I listed, but added some diced butternut squash like Tieghan did in her cookbook. My brain struggles with foods that LOOK savory but have a sweet edge to them. I figured the butternut squash would ease some of the sweet, and it did! I’m glad I added that.

Chopping fruits and veg is sooooo therapeutic! I love it! Apples and butternut squash shine as the base of this recipe.
But don’t forget the onions which are carmelized in APPLE CIDER!!! Doesn’t get more autumn-ish than that!
The finished product! YUM!

If I make this soup again, I’ll definitely keep the butternut squash, I’ll use chicken or veggie stock instead of the pumpkin beer, and I think I’d opt for the savory crumble from the cookbook instead of the pecan one from the recipe I followed today. That’s just MY spin on it! You should definitely try it for yourself! (And remember to remove the rind from the brie! As Tieghan says, that’s key!)

  1. This sounds so good. I could eat just a whole bowl of those delicious caramelized onions. Glad for your suggestions to the recipe. PC would prefer a savory topping to a sweet. I love pumpkin beer so might have to stick with the recipe on that, though!! Thank you for sharing and for joining the blog hop.

    1. I might make it again with some adjustments and post the my-version recipe. I’m wary of that because I want to respect the author of the recipe, but I’m talking some pretty big adjustments! Stay tuned!

  2. I adore her website – we make a sweet potato lentil red curry from it, and her dan dan noodles. I wasn’t aware she had a cookbook out though (rubs hands together…)

  3. I struggle with sweet-ish soups too, Michael Ann, but you have me hooked with the brie! (Although I love a good cold fruit soup in the summer. I don’t have to make sense, do I?)
